I find that it’s much easier to eat Keto style over the work week than it is over the weekends. Where I am and who I’m hanging out with is so variable that I find a little difficulty in getting just the right portions of Fat, Protein, and Carbs. I’ve already had four eggs and two strips of pork belly, very minimal carbs and NOT ENOUGH FAT. I tried getting a little from Philz Coffee by getting an Iced Ecstatic Coffee with heavy cream. I could really go for some bacon right now. So hard to function as I’m writing this.
Let me catch you up on what I’ve been eating. Below is what I had Thursday for lunch. I’m going to call it Last Resort Pork Belly because someone had thrown away all the great veggies that were left over from lunch. My last resort for a side were small packaged cups of guacamole and hummus. All of which I topped with sesame oil, spicy sauce, and of course butter. Honestly, this looks like crap but tasted pretty good.
However, what was really good over the last couple days was Korean food! Alright I need to go find some fatty foods to eat now.
